In a large microwave safe bowl combine the mozzarella cheese and cream cheese. Heat in 30 second increments until cheese is completely melted.
Stir the cheese so they are combined. In a second smaller bowl combine the almond flour and baking powder. Mix to the melted cheeses.
When the almond flour and cheese are nearly combined add in a beaten egg white and stir well. Roll dough into a ball and cut in half.
Press each half out into a 4" × 5" rectangle. Roll one sausage up in each dough half and press seams closed. Sprinkle the top with sesame seeds.
Place each wrapped sausage into the air fryer basket. Adjust the temperature to 400°F and set the timer for 7 minutes.
The outside will be golden when completely cooked.
