 2 portobello mushroom caps, stems removed, washed and dried with a paper towel
 2 tbsp extra virgin olive oil
 2 tsp minced garlic
 2 tsp Italian seasoning
 ¼ cup low-carb pizza sauce
 1 cup reduced-fat shredded mozzarella cheese
 4 cherry or grape tomatoes, thinly sliced
 8 miniature-sized pepperonis
 2 leaves fresh basil, chopped
 1 tbsp balsamic vinegar

Brush each cap with olive oil, brush with minced garlic and sprinkle Italian seasoning.

Fill each cap with sauce, mozzarella, pepperonis and sliced tomatoes. Place each mini pizza into a 6" round baking pan. Place pan into the air fryer basket.

Adjust the temperature to 380°F and set the timer for 10 minutes.

Carefully remove the pizzas from the fryer basket and garnish with basil and a drizzle of vinegar.
