 1 large eggplant
 2 tbsp avocado oil
 ¼ tsp salt
 ½ tsp garlic powder
 ½ tsp Italian seasoning

Remove top and bottom from eggplant. Slice eggplant into 1/4"-thick round slices.

Brush slices with olive oil. Sprinkle with salt, garlic powder and seasoning. Place eggplant slices into the air fryer basket.

Adjust the temperature to 390°F and set the timer for 15 minutes. Serve immediately.
